Domenico Tolomeo
Domenico “Mimmo” Tolomeo is a first-generation Italian American who comes from a long line of master bread makers from Italy’s southern region.
At 32, he decided to make a career change and began studying the art of pizza making. He trained under Award Winning Master Pizzaiolo Roberto Caporuscio. Under Roberto’s guidance, Mimmo received his certification from the Associazione Pizzaiouli Napoletani, the governing body of pizza makers in Italy. Over the course of his first year Mimmo was the recipient of the 2019 Caputo Rising Star Pizzaiolo at the infamous Caputo Cup. He was the Capo Pizzaiolo at the World Renowned Keste Pizza e Vino and is now the co-owner of Taglio Pizza in Long Island, NY.

Welcome to Fiero’s Authentic Education class! This exclusive 2 day course will focus on starting your full-service mobile pizza operation. We will cover all aspects of pizza making and production, cooking with fire, ingredients and menu development, skills and techniques, and general best-practice pointers based on your vision or your business. Lunch, snacks and beverages will be supplied!
The course will be led by Executive Chef Domenico Tolomeo. Joining him will be key members of our creative and business team. We’ll be cooking with fire and gas, bringing the outdoors indoors in our Production Facility, so you can learn to cook outdoors regardless of the season. Additionally, we will be using our test kitchen and dough room for creative conversation, prep and cooking.

You’ll need:
- Items for notetaking
- Appropriate footwear for a day on your feet (non-slip preferably)
- Good Energy and Hunger to Learn!
- Dress appropriately: the classes will be held outdoors the majority of the time, please dress appropriately for the season
