THE ITALIAN HEARTH BEATING INSIDE
Aldo Pavesi, b. 1946 in Modena, Italy, is the master refractory engineer responsible for the world renown of the Pavesi hearth found inside of every one of Fiero’s traditional, rotating, and mobile oven lines. Aldo studied as a refractory engineer for the ceramic goods industry, designing the refractory Italian pizza ovens to bake ceramic household products. These years spent perfecting different refractory recipes and dome shapes provided Pavesi a deep understanding of the unique properties of refractory material components.
Aldo founded Pavesi Forni SRL in 1969, with the development of the single piece refractory baking floor.
To this day, no other refractory engineer has been able to successfully replicate this feat, which provides incredibly even heat transfer across the floor and reduces cracking. His belief in his product is so firm that Pavesi extends a 10 year warranty on the refractory material he produces.
Although Aldo Pavesi continues to oversee production, his children, Alessandro and Elena, have joined him in their successful family business, preserving the secret refractory recipe that sets the standard for wood fired ovens.
STEEPED IN ITALIAN TRADITION, BUILT IN AMERICA
Each and every Pavesi hearth continues to be built in Pavesi’s facility in Modena, Italy. Ovens begin their life in the daily mixing of the signature refractory recipe, which is poured into specially designed molds. These molds form the refractory brick which makes up each Fiero oven hearth. The molds remain stored on the shelves of the Pavesi facility, where they slowly cure over the space of a month.
After curing, the refractory parts are removed from their molds and are shipped to the Fiero Forni facility in the USA. The hearths are used as the heart of every Fiero traditional, rotating, and mobile oven, becoming transformed by Fiero’s unique and carefully designed ovens that transform a hearth into an incredible wood or gas burning oven. Whether built on site or built within the Fiero production center for shipping, you can be sure that your Fiero oven brings the best of Italy and American manufacturing into one remarkable package.
