Parlor Pizza Bar serves a menu of 14-16 uniquely curated wood fired pizzas, alongside a vast menu of craft beers and wines. Located in the West Loop of Chicago, Illinois; Parlor often serves over 2,000 covers on a Saturday night between its indoor dining room, bar, outdoor patio and rooftop seating. Locally sourced ingredients top the pizzas with such inventive names as “Cheesus, Mary and Joseph” and “Aunt Chilada Chicken” – providing a fun, youthful atmosphere.

Forza Forni provided a full design and consultation package, designing the hand molded artisanal oven exteriors for the three Italian Pavesi traditional pizza ovens. Chef/consultant Peter de Jong guided the process of menu design, dough management, and wood fired oven operation, working directly with the Parlor chef and staff. The Pavesi ovens were custom-built in the Forza Forni production facility in New York and shipped to Parlor for installation.

The success of Parlor has led to the LGN Group to greenlight the opening of a second location, capturing the same experience of the original Parlor and once again exclusively using Pavesi traditional ovens.
