Led by chef/entrepreneur David DiBari, who the New York Times describes as “If there is such a thing as a genius of dough making… David DiBari would certainly seem to qualify,” the Parlor delivers delicious wood fired pizza in an intimate, open kitchen setting, complete with graffiti on the walls and oven.
Forza Forni custom designed and built the steel enclosure around the oven and hood, maintaining the urban look that Chef DiBari wanted to achieve. The restaurant and menu revolve around the Pavesi traditional brick oven, with both pizzas, appetizers and specials all spending time in the 900ºF wood fired oven.
